Quinoa, being a herbaceous plant of the spinach and beet family and not a cereal, it is free of grain and therefore gluten. Compared to cereals, it brings much more fiber and low in fat. In our new recipes we use it as an alternative to rice as the combination tuna to balance the intake of protein and fiber. Despite this, compared to rice it contains more fiber, but also more protein. Quinoa is cultivated in the Andes 5,000 years and is a very hardy crop that adapts easily to all environmental and climatic conditions.
For this it fits very well with the "naturalness" of Schesir: it does not require the use of chemical fertilizers and soil preparation is done by traditional means, not mechanically.
